Center of Excellence for Food Technology Research

The Global Food Institute was set up in Whirlpool’s Cassinetta plant in Varese (Italy) in 2012. It’s a center of excellence in the field of food technology research applied to the development of innovative, high performance household appliances. The 300 m2 facility has laboratories and kitchens where a team of food technologists translate their “food-centric” vision into innovation and development in the fields of food preservation, treatment and preparation.

The Global Food Institute develops new food treatment systems to improve the performance of Whirlpool Corporation’s home appliances and to meet consumers’ needs. By improving products’ preservability and safeguarding their wholesomeness and sensory properties, Whirlpool also intends to help reduce food wastage.

ONE TEAM, A RANGE OF SKILLS

The Global Food Institute’s food technologists have a knowledge base spanning chemistry (proteins and fats), physics (consistency, pH, acidity and color), microbiology and nutrition that enables them to accurately analyze aspects and properties of all foods. Leveraging their vast experience in the field of food preservation and cooking technologies, Whirlpool’s specialists analyze the data in their possession to produce prototypes and tests for products and processes for the purpose of constantly improving the end user experience. In-depth knowledge of the ethnic, cultural and social values associated with the use and treatment of food makes the Global Food Institute technologist a key figure in both the development of new technologies to apply to products and in relations with partners and communication, engineering and marketing people in general.

A MULTISENSORIAL APPROACH

The objective approach adopted to validate cooking and preservation performance is based on the use of instruments that emulate the human senses (sight, smell, hearing, touch and taste). Instrumentation data are then correlated with sensory assessments made by trained tasters capable of distinguishing and quantifying the quality attributes that characterize the food undergoing cooking or preservation processes. The sensorial analysis laboratory, equipped with 8 tasting stations, enables them to carry out accurate and reproducible quali-quantitative analysis in line with international standard procedures.
